How to use this multi-level cooking kit?

For direct cooking, use a grate over the coals. This is ideal for searing a ribeye, steaks, skewers, or grilled vegetables.
For indirect cooking, place a half-moon deflector under the grate. The heat does not directly touch the food, allowing it to cook more slowly and evenly. This configuration is perfect for whole chicken, ribs, roasts, smoking, or long cooks.

A kamado is much more than just a barbecue. Thanks to its ceramic bowl and excellent heat retention, it can be used for grilling, searing, smoking, roasting, slow cooking, and even making pizzas or bread. It can be used for quick high-temperature cooking as well as long, slow cooking.
For best results, use natural lump charcoal, without additives or chemical fire starters. This type of charcoal provides better combustion, produces less ash, and allows for better temperature control. Avoid classic briquettes, which are often less suitable for kamado cooking.
Yes, temperature control is achieved using the vents located at the top and bottom of the kamado. By opening or closing these air inlets, you adjust the temperature according to the desired cooking type: low temperature for smoking, medium heat for roasting, or very high temperature for searing meat or cooking pizza. After a few uses, adjusting becomes very simple.
The choice depends on the number of people you regularly cook for and the space you have available.
To help you choose:
- 15 inches: ideal for up to 6 people
- 18 inches: 39 cm grate — ideal for 6 to 8 people
- 21 inches: 47 cm grate — ideal for 8 to 10 people

Yes, maintenance is very simple. Just heat the kamado to a high temperature for a few minutes to burn off cooking residues, then scrub the grill with our cleaning brush. Once the ashes have cooled, all that remains is to regularly remove them to keep your kamado clean and ready for use.
