For best results, use natural lump charcoal, without additives or chemical fire starters. This type of charcoal provides better combustion, produces less ash, and allows for better temperature control. Avoid classic briquettes, which are often less suitable for kamado cooking.
Yes, temperature control is achieved using the vents located at the top and bottom of the kamado. By opening or closing these air inlets, you adjust the temperature according to the desired cooking type: low temperature for smoking, medium heat for roasting, or very high temperature for searing meat or cooking pizza. After a few uses, adjusting becomes very simple.
The choice depends on the number of people you regularly cook for and the space you have available.
