Step-by-step preparation

1. Prepare the vegetables

Wash the pumpkin thoroughly.
No need to peel it: its thin skin becomes melting when cooked, while preserving its nutrients.
Cut it into large pieces, remove the seeds.
Next, finely chop the onion, leek and carrot.


2. Sauté the vegetables

In your enameled cast iron pot , heat the olive oil over medium heat.
