Ingredients (serves 4)

  • 6 eggs

  • 100 ml of liquid cream or whole milk

  • 1 courgette

  • 1 red bell pepper

  • 1 small red onion

  • 6 cherry tomatoes

  • 100g of fresh goat cheese or log

  • 1 tbsp olive oil

  • Salt, pepper

  • ½ tsp sweet paprika

  • A few fresh basil or parsley leaves

Preparation

  1. Preheat the oven to 180°C (fan oven).

  2. In your 25cm enamelled cast iron pan , pour the oil and fry the diced vegetables for 10 minutes over medium heat, until lightly browned.

  3. In a bowl, beat the eggs with the cream, salt, pepper and paprika.

  4. Pour the mixture over the vegetables, arrange the goat cheese slices on top and cook for 3 minutes over the heat without stirring.

  5. Transfer the pan directly to the oven for 10 to 12 minutes until the frittata is golden brown and puffed up.

  6. Serve warm, garnished with basil or parsley.
