Oval enamelled cast iron casserole – Fir Green · Mamie Cocottes
An elongated casserole by Mamie Cocottes for generous meals and slow oven cooking. Its oval shape accommodates joints of meat, poultry and fish, then moves from hob to oven and straight to the table.
Thanks to the high-quality enamelled cast iron, heat is distributed slowly and evenly. Food simmers gently, flavours develop, and juices are locked in.
Roast chicken, herb-braised lamb, pulled pork, beef bourguignon, baked fish, vegetables or homemade bread: choose the size to suit your recipe. The 31 cm model serves around 6 people; the 33 cm model around 6–8, depending on portions.
Steam condenses beneath the textured lid and falls back onto the food in droplets. This natural self-basting helps keep dishes juicy and reduces the need to lift the lid during cooking.
The light beige enamelled interior makes it easy to see how ingredients are browning and simplifies hand washing. Enamel does not need seasoning.
Suitable for all hobs, including induction, and the oven up to 250 °C. The stainless steel knob and wide handles make it practical for cooking and serving. Always use oven gloves when handling the hot casserole, lid or knob.
Allow to cool before washing by hand in warm soapy water with a soft sponge. Briefly soak any stuck-on food, then rinse and dry thoroughly. Avoid thermal shock, abrasives and utensils that could scratch the enamel.

Enamelled cast iron should be heated gradually. Preheat your casserole, frying pan, or Dutch oven for about 4 to 5 minutes over medium heat, then add a small amount of oil or fat before adding food. There is no need to use maximum power: cast iron retains and distributes heat very well. Also, avoid heating your cookware empty for too long.
Always allow your utensil to cool before cleaning to avoid thermal shocks. Use hot water, dish soap, and a non-abrasive sponge. For stubborn residues, soak the utensil before gently cleaning it.
