But to fully benefit from all the advantages of enameled cast iron, it is essential to follow a few simple steps every day.

Before first use

Upon receiving your enameled cast iron pan or casserole dish, it is essential to clean it to remove any dust or manufacturing residue. Use warm, soapy water and a soft sponge to gently clean the surface. Be sure to dry the cookware thoroughly after cleaning to prevent any moisture buildup.

Unlike raw cast iron, our enameled cast iron pots and pans require no seasoning. The enamel already forms a protective barrier against moisture and food residue. To prolong their lifespan, always dry your cookware immediately after washing. As an extra precaution (not mandatory) , you can apply a light coating of olive oil to the inside to enhance rust protection.

Mamie Cocottes enameled cast iron cookware is compatible with all types of hobs : gas, electric, ceramic, induction, and conventional ovens (electric, gas, wood, coal, oil, etc.). If you are using a ceramic or induction hob, avoid sliding your casserole dish or pan: always lift it to prevent damaging the hob surface or the base of the cookware.

For optimal efficiency, always match the size of the flame or heating area to the diameter of the pan's base. This ensures even heat distribution while preventing the handles and sides from overheating. On a gas stove, the flame should never extend beyond the edges of the base.

Finally, ensure that the handles or grips are not in direct contact with a heat source.

Use in the oven

Casseroles or dishes with cast iron handles can be used in the oven at any temperature . However, when using lids with stainless steel knobs, the temperature should not exceed 250°C .


If you own utensils containing wooden parts, they are not compatible with oven cooking.

Grilling: How to do it

Grills and ridged pans require preheating empty (without food or oil) before use to reach the temperature necessary for caramelization or searing.

  • Never preheat oil alone in a cold pan, as this can cause smoke and damage the enamel.
  • Place your grill over medium heat and let it heat for a few minutes.
  • To test the heat, throw a few drops of water on it: if they crackle immediately, the surface is ready.
  • Once hot, lightly spray with oil (or apply with a silicone brush) before placing your food on it.
  • To achieve beautiful grill marks, cook without moving the food until it naturally releases.

Fry & Sauté

For successful frying or stir-frying, it is important to gently heat the oil and pan at the same time .

  • The oil is ready when it ripples slightly.
  • For the butter, wait for a foam or small bubbles to appear.

This ensures controlled cooking without overheating.

Recommended utensils

To preserve the enamel of your utensil, choose silicone or wooden spatulas and spoons .

  • Avoid metal utensils that could scratch the surface.
  • Never hit your accessories against the edge.

Do not use electric whisks or cut food inside the utensil.

Ovens with cast iron bases

If your oven has a cast iron base, avoid placing your casserole dish or casserole directly on the bottom: this could cause it to cook too quickly, compromising the flavor. Always place your cookware on a rack or baking sheet .

Precautions with handles and buttons

Whether in the oven or on the hob, cast iron handles and stainless steel knobs can get very hot . Always use oven mitts or thick cloths to handle your casserole dish or frying pan safely.

Also remember to regularly tighten the screws on the handles or buttons if necessary.


The stainless steel knobs on our casseroles and pans can withstand temperatures up to 250°C . Beyond this temperature, they may deteriorate. We therefore advise you to avoid cooking at very high oven temperatures to preserve the durability of your products.

Cleaning & maintenance

  • Do not try to remove the patina formed with use: it plays a protective and non-stick role.
  • Wait for the utensil to cool down a little before washing it.
  • After conventional cooking, a simple rinse with hot water and drying with a damp cloth is sufficient.
  • For a deeper clean, use warm soapy water. If residue persists, let it soak before scrubbing with a soft brush (ideal between the grooves of a grill).
  • Never use abrasive pads or harsh products.
  • For external stains (burnt grease, etc.), a nylon pad or a specific enamel product will do the trick.

It is important to dry enameled cast iron products after each wash for several reasons:

  1. Preventing rust : Even though enamel protects the cast iron, unenameled edges (for example, around the lid or at the handle joints) remain susceptible to moisture. If water stagnates, small traces of rust may appear.

    A little old-fashioned tip: apply a light film of olive oil to sensitive areas as well as the inside of your casserole dish. This simple step creates a protective barrier and effectively prevents rust.

  2. Avoid halos and limescale deposits : water left on the surface can leave white marks or dull the shine of the enamel over time.
  3. Ensuring the longevity of the enamel : drying properly helps to keep the surface smooth and shiny, without residues or deposits that could alter its aesthetics.
  4. Hygiene and odors : trapped moisture can lead to unpleasant odors or bacterial growth, especially if the lid is replaced before the pot is completely dry.

Dishwasher

Casseroles and skillets with cast iron handles or knobs are dishwasher safe , but repeated washing can slow the formation of the natural patina and damage the enamel.
